Bacon & Cauliflower Soup
Ingredients
- 450 g Cauliflower, Raw, Average
- 1 Med/180g Onions, Raw, Average
- 125 g Bacon, Lean, Average
- 3 Med Size/750g Potatoes, Baking, Raw, Average
- 25g Butter, Reduced Fat, Fresh, Average
- 1 Cube/7g Stock Cubes, Vegetable, Average
Method
- Melt the butter in a medium-sized non-stick pan, add chopped onion and fry until soft.
- Cut the bacon into small strips and add to the butter along with the peeled diced potatoes and cauliflower florets.
- Make up 1 litre of stock and add to the pan. Bring to the boil, cover and simmer gently on a low heat for about 25 minutes. Do not allow to boil.
- Remove from the heat and leave to cool slightly, stir in the parsley and serve.
