Bacon & Cauliflower Soup

Ingredients

  • 450 g Cauliflower, Raw, Average
  • 1 Med/180g Onions, Raw, Average
  • 125 g Bacon, Lean, Average
  • 3 Med Size/750g Potatoes, Baking, Raw, Average
  • 25g Butter, Reduced Fat, Fresh, Average
  • 1 Cube/7g Stock Cubes, Vegetable, Average

Method

  1. Melt the butter in a medium-sized non-stick pan, add chopped onion and fry until soft.
  2. Cut the bacon into small strips and add to the butter along with the peeled diced potatoes and cauliflower florets.
  3. Make up 1 litre of stock and add to the pan. Bring to the boil, cover and simmer gently on a low heat for about 25 minutes. Do not allow to boil.
  4. Remove from the heat and leave to cool slightly, stir in the parsley and serve.
