Leek Salad

Ingredients

  • 2 Pack/350g Leeks, Baby, Tesco*
  • 1 Tbsp/15ml Vinegar, White Wine, Average
  • 1oz/28g Mint, Fresh, Average
  • 25 ml Oil, Olive, Gentile, Extra Virgin, Bertolli*

Method

  1. Trim and wash the leeks before blanching in boiling water for 1-2 minutes until tender. Drain and refresh under cold water.
  2. Mix the chopped mint, oil and white wine vinegar together in a small bowl and pour over the baby leeks. Adding salt and freshly ground pepper to taste.
  3. Allow to marinate for 5 minutes before serving.
