CLDUTCH's Brocolli, Carrot & Leek Soup
Ingredients
- 466g Broccoli, Florets, Raw, Budgens
- 400g Carrots, Sliced, Fresh, Average
- 122g Leeks, Loose, Class 2, Tesco
- 1 Tsp/1g Thyme, Fresh, Average
- 4 Cubes/400ml Stock Cubes, Vegetable, Oxo
- 2½ Pints/1420.8ml Water, Mineral Or Tap
Method
- Roughly chop all the vegetables and place in a large saucepan
- Add the 2.5 pints of water and bring to the boil
- Once boiling, reduce the heat slightly and allow to simmer for approx 12mins
- Take
- Once cool blend the soup
- Pour back into the suacepan and heat up - or put into containers, keep in the fridge and heat up later!
