Brocolli, Carrot & Leek Soup

 

Ingredients

  • 466g Broccoli, Florets, Raw, Budgens
  • 400g Carrots, Sliced, Fresh, Average
  • 122g Leeks, Loose, Class 2, Tesco
  • 1 Tsp/1g Thyme, Fresh, Average
  • 4 Cubes/400ml Stock Cubes, Vegetable, Oxo
  • 2½ Pints/1420.8ml Water, Mineral Or Tap

Method

  1. Roughly chop all the vegetables and place in a large saucepan
  2. Add the 2.5 pints of water and bring to the boil
  3. Once boiling, reduce the heat slightly and allow to simmer for approx 12mins
  4. Take
  5. Once cool blend the soup
  6. Pour back into the suacepan and heat up - or put into containers, keep in the fridge and heat up later!
