Diet Pasta Recipes – Homemade Tomato Pasta

A deliciously simple tomato pasta recipe for when you’re on a diet. Pasta can be a filling staple when dieting, and this authentic, homemade tomato pasta is just one pasta dish from our tasty diet recipes.
Taken from our ’Diet on a Budget’ meal plan, which provides info and recipes to help you diet without spending a fortune. This tomato pasta recipe makes enough for 3 portions (which can be saved and frozen) at 130 calories each.
Ingredients
- 3 tsp Olive oil
- 1 Med onion, chopped
- 2 Cloves garlic, crushed
- 2 Carrots (approx 150g)
- 2 Sticks Celery (approx 80g)
- 600g chopped (tinned) tomatoes
- 3 tsp Tomato puree
- Salt & pepper
- ½ tsp Sugar
- 100g Dry pasta (twists)
Method:
- Peel the vegetables and chop in a food processor or finely by hand
- Heat the oil in a heavy based saucepan and add the chopped vegetables and sauté until soft. Add the tinned tomatoes, sugar and tomato puree and salt & pepper to taste. Simmer for 30 minutes.
- While the sauce is cooking, prepare the pasta according to the packet instructions.
- Pour one portion (1/3rd) of the sauce over the hot pasta (see notes below).
Notes:
Once cooked, divide the tomato sauce for the pasta into 3 portions, one for now, and reserve two portions for use in The Budget Diet Plan - Week 1, Day 5 Dinner.
